Cut the fillet and grind it in a blender to a paste. Pour the fresh milk
into it in parts. Add the spices, salt, sugar and starch. Add the egg and
minced garlic. Mix everything. You should get a homogeneous mixture with a white color.
Grease the cups with butter and fill them with the minced meat, which should occupy 4/5
of their volume. Carefully wrap the cups with foil.

Fill a large pot with water. You can place a piece of cloth at the bottom. When
the water is hot, add the cups of meat. The water should come about halfway
up the cups. Bring to a boil and cook for another 40 minutes.

When the cups have cooled, remove the sausage.

Don’t be afraid to experiment! You can add cheese,
herbs, olives, mushrooms to the mixture. The sausage can be fried before serving, and you will get
a natural and tasty product.
